Where do you start when you need to design a new kitchen?
What do you do when that kitchen is just part of a much bigger project, a new Rugby Club Stadium for example, and you have one hundred and one other things to think about?
The answer is to ask the professionals, people who design kitchens day in and day out and let them take the strain. Talking to a design house will also open up new ideas, concepts and technology that you may not think of on your own.
There are lots of people who claim to be kitchen designers so when The Exeter Chiefs Rugby Club had the opportunity to build a new stadium they sought recommendations to guide their choice. In this case many years of successful service to Exeter University was recommendation enough from their former Hospitality services Director and now consultant Derek Philips for The Chiefs to select Allsop and Pitts.
The new stadium, just off of junction 30 of the M5 at Exeter, will cater on match days for over 800 people over two floors of function rooms and reserved boxes from a fantastic ground floor kitchen. This kitchen has the latest equipment including Electrolux and Zanussi combination ovens, blast chillers, heavy duty ranges, fryers, bratt pans and grills with a plating system, rack dishwasher and utensil washer to support the catering team with their task.
The design of this kitchen will allow flexibility in menu and styles of service with food being distributed to the floors in three different types of trolley. Hot plated food will travel in trolleys with insulated covers 60 at a time, chilled plated food will travel in Moffat Chilogen Trolleys that hold at the correct temperature, heat food at the allotted time and then hold hot without adverse effect on the food and hot bulk food will travel in Alto Sham Trolleys that heat so gently with the halo system that food will not dry out or discolour at all during holding. Only by building innovation into the design could the kitchen hope to cope with the numbers and complexity of service in 5 different locations over the two floors at the same time.
