The catering service at RHS Rosemoor near Great Torrington in North Devon is of an amazingly high standard where fresh food is served daily to the many visitors to the horticultural gardens.
When Allsop & Pitts first visited Rosemoor the old servery had been in place for many years and needed a fresh look but also some ideas to revise the layout. These changes were needed to allow a faster movement of customers through the area, improved display of the food on offer and a way of coping with sudden peaks in business that had been creating queues and loss of business.
Working closely with the caterers a new layout was proposed that added extra till points (that could easily be opened and closed as demand dictates), added a grab’n’go self-service section that can also be opened as a second beverage area as needed, created a central display of cakes and pastries that can be accessed from two sides and located the cutlery and condiments away from the tills to move customers away from the pay points more quickly.
The main servery has hot, cold and ambient service points plus a back counter with refrigeration and beverage equipment and a dedicated till which can be used alone at quiet times to keep the staffing costs efficient. At busier times the island unit has ambient and refrigerated display plus ice cream service and a second till that can be brought into operation. The grab’n’go has a third till for the real times of peak demand that a coach party or large group descending together brings.
The counters have Corian solid surface tops with recessed tray pick-ups and an integrated tray slide, decorative laminated panels to the front of all units and stainless steel kick strips.
The servery is now modern, bright and uncluttered and has been in use since May 2015 providing the improved flow of customers that was asked of it.
